As reported by the Wall Street Journal, Mondelez International, the maker of Oreos, Chips Ahoy, and various other snacks, has embarked on a journey to create innovative flavor profiles using an AI-driven tool.
This cutting-edge machine learning technology has already influenced more than 70 of Mondelez’s products, leading to delightful new offerings like the “Gluten Free Golden Oreo” and a revamped version of Chips Ahoy. Developed in collaboration with the software consultancy Fourkind, this AI tool is designed to enhance sensory aspects, focusing on flavor notes such as “buttery,” “in-mouth saltiness,” and “vanilla intensity.”
Even though machines lack the ability to taste or smell, Mondelez still relies on human taste testers to verify the quality of the flavors produced by the AI. Kevin Wallenstein, the biscuit modeling research and development manager, highlighted the rigorous nature of the taste testing process, which can be quite demanding and detailed.
The flavor discovery tool has been evolving since 2019, utilizing historical data on recipes and ingredients to craft new flavor combinations. In its early stages, the AI occasionally proposed unconventional suggestions, including cookies with an overwhelming amount of baking soda. However, by incorporating feedback from human “brand stewards,” Mondelez has fine-tuned its machine-learning tool to yield more practical and appealing flavor choices.
